  首乌肝片:

  [配料] 首乌液20毫升,鲜猪肝250克,水发木耳25克,青菜叶少许,绍酒、醋、盐、淀粉、鲜汤、酱油、葱、姜、蒜、油适量。

  [做法] 首乌煎汤浓缩,取20毫升药液备用,猪肝剔筋洗净切片,葱、姜、蒜洗净,葱姜切丝,蒜切片,青菜洗净控干。

  将猪肝片放入首乌汁内浸蘸(取一半首乌汁),加少许食盐,放适量淀粉搅拌均匀,另把剩余的首乌汁、酱油、绍酒、醋、湿淀粉和鲜汤兑成滋汁。

  炒锅置大火上烧热入油,待油热放入拌好的猪肝片滑透,用漏勺淋取余油,锅内剩少量油,下入蒜片、姜末略煸出香味下猪肝、水发木耳,暴炒数分钟,将青菜叶入锅翻炒数次,八成熟时倒入滋汁炒拌均匀,出锅前把葱丝下锅,翻炒即下,起锅即成。

  [功效] 补肝肾,益精血,乌发明目。(首乌即能保肝,又可降脂、降压;木耳有通利血脉之效,无病常吃也能健身益寿。)

  珍珠三鲜汤:

  [配料] 鸡肉脯50克,豌豆50克,西红柿1个,鸡蛋清1个,牛奶25克,淀粉25克,料酒、食盐、味精、高汤、麻油适量。

  [做法] 鸡肉剔筋洗净剁成细泥;5克淀粉用牛奶搅拌;鸡蛋打开去黄留清;把这三样放在一个碗内,搅成鸡泥待用。

  西红柿洗净开水滚烫去皮,切成小丁;豌豆洗净备用。

  炒锅放在大火上倒入高汤,放盐、料酒烧开后,下豌豆、西红柿丁,等再次烧开后改小火,把鸡肉泥用筷子或小勺拨成珍珠大圆形小丸子,下入锅内,再把火开大待汤煮沸,入水淀粉,烧开后将味精、麻油入锅即成。

  [功效] 温中益气,补精填髓,清热除烦。

  食物禁忌:

  猪肝忌与黄豆、豆腐同食(同食易发痼疾);忌与鱼肉同食(同食令人伤神)。

  杜仲腰花

  [配料] 杜仲12克,猪肾250克,葱、姜、蒜、花椒、醋、酱油、绍酒、干淀粉、盐、白砂糖、植物油、味精各适量。

  [做法] 杜仲清水煎浓汁50毫升,(加淀粉、绍酒、味精、酱油、盐、白砂糖,兑成芡汁分成三份备用)。猪腰片去腰臊筋膜,切成腰花,浸入一份芡汁内,葱、姜、蒜洗净切段、片待用。

  炒锅大火烧热,倒入植物油烧至八成热,放入花椒,待香味出来,投入腰花、葱、姜、蒜快速炒散加入芡汁,继续翻炒几分钟,加入另一份芡汁和醋翻炒均匀,起锅即成。

  [功效] 壮筋骨,降血压。

  药食合用,共奏补肾、健骨、降压之功。无病食之,亦可强健筋骨。

  参蒸鳝段:

  [配料] 鳝鱼1000克,党参10克,当归5克,熟火腿150克,食盐、绍酒、胡椒粉、生姜、大葱、味精各适量,清鸡汤500克。

  [做法] 党参、当归洗净浸润后切片备用;鳝鱼剖后除去内脏,清水洗净再用开水稍烫一下捞出,刮去粘液,剁去头尾,再把肉剁成6厘米长的段;熟火腿切成大片,姜、葱洗净切片、段备用。

  锅内入清水,下入一半的姜、葱、绍酒烧沸后,把鳝鱼段倒入锅内烫一下捞出,装入汤钵内,将火腿、党参、当归、放于面上,加入葱、姜、绍酒、胡椒粉、食盐,再灌入鸡汤,用绵纸湿浸封口,上蒸笼蒸约1小时至蒸熟为止,取出启封挑出姜、葱加入味精,调味即成。

  [功效] 温补气血,强健筋骨,活血通络。多用于风寒湿痹引发的腰膝酸痛。

  菊花鳝鱼:

  [配料] 粗活鳝鱼1斤(两条),白糖2两,番茄酱1两,干淀粉1两,黄酒、白醋、食盐、葱、姜、湿淀粉、麻油、蒜泥各适量,花生油2斤。

  [做法] 鳝鱼宰杀、剖腹去内脏,去骨去皮,切成2寸5分长片块,用刀顶头斜批成两片(末端不批短),再直切成条状(一头不切断)加黄酒、盐、葱、姜浸渍起来,然后再逐个排上干淀粉;将番茄酱、白糖、白醋、湿淀粉一起放入碗内,加适量水调成芡汁。

  烧锅置旺火上烧热,锅内倒油1斤,烧至八成热,将鳝鱼抖散入锅炸至金**,捞出装盘,锅内留少余油,投入蒜泥煸炒出香味,倒入调好的芡汁烧沸后淋入麻油,起锅浇在菊花鱼上即成。

  [功效] 补虚损,除风湿,强筋骨。对体虚乏力,风寒湿痹,痔疮等患者尤为适宜。

  三色汤:

  [配料] 黄豆芽2两,姜丝20克,红大椒1个,植物油、白醋、湿淀粉、鸡汤、食盐、麻油、味精各适量。

  [做法] 将油锅烧热,下黄豆芽煸炒几下,放入白醋炒至八分熟,出锅备用;将锅内放入鸡汤,姜丝,烧开后把红大椒入锅再次滚开后,将黄豆芽、盐、入锅,再用湿淀粉勾芡,淋上麻油出锅即成。

  [功效] 祛风除湿,活血通络。对筋骨拘挛,腰膝疼痛者更为适宜。

  注意:风寒湿痹之人忌食柿子、柿饼、西瓜、芹菜、生黄瓜、螃蟹、田螺、蚌肉、海带等生冷性凉的食物;热痹患者忌食胡椒、肉桂、辣椒、花椒、生姜、葱白、白酒等温热助火之品。

  凉拌莴笋:

  [配料] 鲜莴笋350克,葱、香油、味精、盐、白糖各适量。

  [做法] 莴笋洗净去皮,切成长条小块,盛入盘内加精盐搅拌,腌1小时,滗去水分,加入味精、白糖拌匀。将葱切成葱花撒在莴笋上,锅烧热放入香油,待油热时浇在葱花上,搅拌均匀即可。

  [功效] 利五脏,通经脉。

  蚕豆炖牛肉:

  [配料] 鲜蚕豆或水发蚕豆120克,瘦牛肉250克,食盐少许,味精、香油适量。

  [做法] 牛肉切小块,先在水锅内氽一下,捞出淋水,将沙锅内放入适量的水,待水温时,牛肉入锅,炖至六成熟,将蚕豆入锅,开锅后改文火,放盐煨炖至肉、豆熟透,加味精、香油,出锅即可。

  强壮筋骨的调养食谱

  1核桃仁纸包鸡

  [功效] 补肾壮阳,润肺和胃,强壮筋骨,保健益寿。用于浮肿,乏力,食欲不振,腰膝酸软。为健康人强壮筋骨的养生佳品。

  [用料]净鸡肉 500克,糯米纸24张,核桃仁60克,鸡蛋2个,盐、麻油、花生油、白糖、胡椒面,淀粉、姜、葱各适量。

  [做法]

  1、鸡肉去皮,切成约1毫米厚的薄片。

  2、核桃仁用开水泡,剥去皮,用花生油炸熟,切成小粒。

  3、葱、姜切成细末,鸡蛋去蛋黄,取鸡蛋清。

  4、鸡肉片用盐、麻油、白糖、胡椒面、葱姜末、核桃仁末、鸡蛋清拌匀。

  5、用糯米纸将鸡肉片包成长方形,沾上淀粉以防松开。将花生油烧至五成热,把包好的纸包鸡下锅炸至纸色金黄即可。

  [服法] 当作菜肴随意食之。

  2葱烧蹄筋

  [功效] 营养滋补,强壮筋骨,康人食之甚益。

  [用料] 干猪蹄筋150克,葱200克,瘦猪肉75克,水发香菇50克,白糖10克,绍酒20克,湿淀粉15克,酱油20克,味精适量,清汤750克,熟猪油 500克(实耗100克)。

  [做法]

  1、锅放在旺火上,倒入猪油烧到六成热,干猪蹄筋下锅炸至膨胀酥脆、呈金**时捞在漏勺沥去油晾凉后放入清水中浸泡10小时。

  2、将葱择洗干净,切成10厘米长的段,用细麻绳捆成束,放八八成热油锅炸至金**,倒入漏勺沥去油。

  3.瘦猪肉切成5厘米长、33厘米宽的薄片。炒锅放在旺火上,舀人猪油(25克)烧到五成热,肉片下锅速煸2分钟取出。

  4炒锅移到微火卜,倒人清汤煮沸,过油猪蹄筋和葱束、香菇、肉片、酱油、白糖、绍酒一并下锅煨半小时,最后加入昧精,用湿淀粉勾荧,葱束去线,撤入荧汁即成。

  [服法] 佐餐食之。

  3蹄筋参

  [功效] 形似海参,鲜嫩味美,补肾益精强壮筋骨,营养滋补,为健康人的美味养生佳肴。

  [用料] 水发猪蹄筋400克,虾仁150克,熟火腿片 25克熟鸡皮片25克,虾子25克,鸡蛋清2只,水发木耳300克,青菜心6棵(约500克),料酒5克,盐10克,咪精10克,葱姜汁30克,葱白段 15克 姜片10克干淀粉50克,清汤 150克,湿淀粉50克,熟猪油80克。

  [做法]

  1、将虾仁剁成茸,放入碗中,加鸡蛋情、葱姜汁搅匀,再将木耳剁成末,放入碗中搅匀。

  2、炒锅置小火上,放入蹄筋,舀人清汤,盖上锅盖,烧至蹄筋发软捞出。趁热剁成茸,放入盛虾茸的碗内,加味精、盐、虾子、干淀粉拌成生料。青菜心洗净沥干。

  3、把青菜心放入热油锅肉,待变成翠绿色时,用漏勺捞出。 待油温升至将沸时,用竹刮在碗的边沿将生料刮成海参形,随即放入锅内,炸至皮面结软壳,倒入漏勺。

  4、炒锅置旺火上,舀入熟猪油,放入葱白段、姜片,炸香后捞去,舀入清汤,放入蹄筋参,加味精烧沸,用漏勺捞至盘中,菜心放在两边,用湿淀粉勾荧浇在菜心蹄筋参上。

  [服法] 佐餐食之。

  4猪耳丝

  [功效] 补肝肾,壮筋骨,生精血,开胃舒筋。用于肾虚腰痛,缺钙症,骨质疏松,儿童发育迟缓,老年人腰酸腿软。

  [用料] :猪耳3只(约重500克),葱末、姜末、蒜泥、酱油、味精、白糖、醋、香油各适量。

  [做法]

  1、把猪耳毛刮净、洗净,放入汤锅,煮熟捞起,

  2、把猪耳根部两边的皮削掉,切成5厘米长的细丝,装入盘里。

  3、将葱末、姜末、蒜泥、酱油、味精、醋、香油对成汁,浇到猪耳上即可。

  [服法] 佐餐食之。

  [备考] 此菜香脆味美,为下酒佳肴。

  5芋艿排骨

  [功效] 营养滋补,开胃补钙。既为一道美味佳肴,又是一则强壮筋骨的美味养生膳食。

  [用料] 猪排骨300克,芋艿200克,熟猪油100克,葱、姜、料酒、酱油、白糖、味精、淀粉各备适量。

  [做法]

  1、将排骨洗净,切成5厘米的方块。

  2、芋艿去皮,切成滚刀块,用沸水煮熟,捞起,洗去粘液待用。

  3、炒勺上火,加入熟猪油烧热,投入葱、姜、排骨煸炒几下,烹入料酒、酱油,放白糖、盐、味精和少许清水,烧开之后,微火焖熟后,倒人芋艿块略炸2~3分钟,旺火收汁,再淋水淀粉勾芡,颠翻几下,打入明油推匀,即可出勺装盘。

  [服法] 当做菜肴随意食之。

THE INGREDIENTS

for 6 people

- 600 grams of breadsticks

- 150 grams of grated cheese

- 100 grams of butter

- 1 litre of chicken or beef broth

- a pinch of nutmeg and cinnamon
